Battered French Toast with Strawberry Cream Cheese Frosting

Hello Summertime! This recipe will give you all the summer feels with it’s delightful strawberry frosting filling. This is the perfect breakfast treat for anyone with a sweet tooth.

Ingredients:

  1. Thick cut Brioche Bread

  2. Batter

  3. 6 eggs

  4. 5 ½ teaspoons granulated sugar

  5. ¼ teaspoon salt

  6. 2 cups milk

  7. 1 cup flour

  8. Strawberry Cream Cheese Frosting

  9. 1 stick butter (room temperature)

  10. 8 oz. Philadelphia Cream Cheese

  11. 3 cups confectioners’ sugar

  12. 1 teaspoon vanilla extract

  13. 1 lb. strawberries (diced small) – save a few whole berries for plating

Cooking Instructions:

Whisk the eggs, sugar, and salt together until beaten. Add milk to the egg mixture. Add flour slowly, stir slowly so to not create a flour cloud. Add milk/flour as needed to get a batter consistency where the batter is slowly falling off of the whisk.

In a mixer add the cream cheese and butter together until smooth. Next add the vanilla extract, then add (slowly) the powdered sugar. Lastly add your chopped strawberries to the mix until blended in and smooth with only few chunks.

In a large cast iron skillet heat about half an inch of vegetable oil. Cover your brioche bread in the batter head to toe making sure that you do not miss covering any of the bread. Make sure your oil is hot before dropping in your toast – you can do this by splashing a small amount of water over the oil. Carefully lay your battered bread in the hot oil and cook about 1-2 minutes each side until a nice golden brown.

Wipe off excess oil from your French toast and place one piece on a plate. Add some of your cream cheese frosting and then put a second piece of French toast on top. Put another helping of frosting on top of this piece and then finish by sifting some powdered sugar on top and placing one of your beautiful strawberries on top.
